4 cups seeded and cubed red Watermelon4 cups seeded and cubed yellow Watermelon2 Tbsp. sugar1 Tbsp. lime zest2 Tbsp. fresh lime juice1/2 cup pickled watermelon rind1/4 cup coarsely chopped fresh cilantro1/4 cup coarsely chopped fresh basil1 Tbsp. chopped fresh chives1 Tbsp. seeded and thinly sliced jalapeno pepper1 Tbsp. thinly sliced shallots1 tsp. minced garlic2 Tbsp. olive oil1/2 cup crumbled Cotija cheese (Feta cheese may be substituted)Combine the red and yellow watermelon, sugar, lime zest, and lime juice in a large glass bowl.
Stir in the Pickled Watermelon Rind, cilantro, basil, chives, jalapeno pepper, shallots, and garlic. For less heat, substitute chiles or banana peppers for the jalapeno. To add more heat, leave the seeds in or use a more spicy pepper, like poblano or serrano.
Drizzle with olive oil and sprinkle with cheese.
Serve immediately or cover and chill up to 2 hours.
